Squid with rice - Rizoto s kalamarima





This is one great and pretty much simple Mediterranean dish. It is ideal for summer months because its preparation will not take you a lot of time and you won’t heat your kitchen more than it is necessary. This meal is light on stomach and I think it is a perfect dinner after a day on the beach and as a start of a pleasant evening. Many restaurants on Croatian seashore will offer you this simple but delicious meal.

What will YOU need if you want to prepare this great meal;

½ kg of fresh squid with tentacles,
5 tablespoons of Olive oil,
1 large chopped onion,
1 peeled, chopped tomato,
2 crushed garlic cloves,
1 tablespoon of parsley,
¼ cup of dry red wine,
salt, pepper to taste and
2 cups of rice.

How it is done;

I guess you have clean squid, so you just cut it into a centimetre wide rings or into little peaces – it is your choice or momentarily visual inspiration. Cut also the tentacles.
It is the best to be done in a big and not deep pan. Heath the olive oil and fry the onion till it is lifeless and floppy. Now put chopped squid and sauté for about 5 minutes. Now add the chopped garlic and tomato. Cook for couple more minutes and then add rice, pour over the wine and wait a bit for it to boil. Don’t forget a bit of salt and pepper. When it starts boiling, stir it for 5 minutes. Then pour over triple rice quantity of water and cook on small fire for 15 more minutes, stirring from time to time. If you see that rice is becoming mushy, finish cooking before 15 minutes.

When cooked mix in the parsley and put it from fire to lie down for couple more minutes. Serve hot and don’t forget some salad and inevitable for this dish – dry white wine!
